Really Lovely and Delicious!, November 25, 2008

"I do love a beet, but I'm the only one in my family who does. Until this year that is.
This year I decided to get the kids to plant some seeds and watch them grow so they'd be more likely to try them. It worked!
These beets germinated fantastically and the greens that were left when they were thinned out (3 or 4 from each beet seed came up) made it into our salads as a nice refreshing change from standard lettuce.
The greenery grew really quickly and I worried that the spacing in square foot gardening would be too tight for them, however I harvested half of them younger and was not disappointed! The pattern was perfect in almost all of the beets and the interesting colors made the kids want to eat them. Young ones we ate raw, sliced ever so thin, in salads.
Mature ones had even more striking color bands and those blended out to a nice even color when cooked.
I really do love the mild flavor of these beets and have a prominent place set aside for them in my 2009 garden. Can't recommend these highly enough!"
